When I'm listing a few items, can I use 'and others' at the end instead of
etc.? e.g. We specialise in many fields: agriculture, industry, logistics and
others.
-Or is 'others' reserved only for people?

I prefer to use 'and so on' in place of etc. Yes, you can 'others'
to indicate additional things too but in your example you should say
(for clarity) 'and other related areas.' :-)
