Does anybody know where you can buy this in Warsaw? (more thymus than
pancreas, if you want to be anatomical, but I'm not fussy!)

Presumably you would be able to get it from any family butcher.

I forgot to say that if you want it already cooked and served, then they do it
excellently as a warm starter in the "Sekret" restaurant up the top of
Jezuicka, as you come towards the Rynek starego miasta.

It is in fact one of the best courses you can eat in this city.
