i don't think i'd call a guy who handles the claim a "claim processor"
i guess you could if you really wanted to
but i'd rather call him a claim handler
often in canada they're called adjusters

"claim processor" is better for some kind of a system
that processes/hanles claims

Claim processor is totally fine (in Canada).Processor stands for more than a
food processor or a computer processor. It's also about people who process
applicants, their claims, etc.

and i know what processor stands for
i said that i wouldn't use "claim processor"

most of the times i hear people say adjusters o handlers
but that doesn't mean "processors" is wrong
